Cook pasta in salted water. Drain and set aside.
Heat butter in a saucepan on medium until melted.
Add flour and whisk for one minute until smooth.
Slowly pour in milk and heavy cream. Stir well.
Let the sauce cook for around three minutes until thick.
Add cheddar, Monterey Jack, and Parmesan cheese.
Stir until the cheese melts and the sauce is creamy.
Season with salt, pepper, and smoked paprika.
Add cooked pasta and mix well.
Pour into a greased baking dish.
Mix panko, olive oil, and garlic powder in a bowl.
Sprinkle mixture over mac and cheese.
Add crumbled bacon on top.
Cook in the oven at 375°F for 15 minutes until crispy.
Garnish with parsley before serving. Enjoy!
