Ingredients
  

  • 6 Roma tomatoes
  • 2 jalapeños
  • 1 small onion
  • 3 garlic cloves
  • 1 teaspoon salt
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon black pepper
  • 1 tablespoon lime juice
  • 1/4 cup fresh cilantro
  • 1 tablespoon olive oil
  • 1/2 teaspoon sugar
  • 1/4 teaspoon smoked paprika

Instructions
 

  • Preheat the oven to 425°F.
  • Put tomatoes, jalapeños, onion, and garlic on a baking sheet.
  • Drizzle with olive oil and roast for 20 minutes.
  • Let them cool a bit.
  • Put them in a blender or food processor.
  • Add salt, cumin, chili powder, and black pepper.
  • Blend until smooth or a little chunky.
  • Pour into a saucepan and cook for 10 minutes.
  • Stir in lime juice, cilantro, sugar, and smoked paprika.
  • Let it cool a little before serving.

Notes

  • Roast veggies longer for a stronger taste.
  • Remove jalapeño seeds for a less spicy salsa.
  • Use fresh lime juice for better flavor.
  • Add more garlic if you like strong flavors.
  • Let salsa sit for an hour to taste even better.
