Ingredients
  

  • 2 cups rice flour
  • 1/2 cup sugar
  • 1/2 cup butter softened
  • 1 egg
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup milk

Instructions
 

Step 1:

  • Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

Step 2:

  • Stir together rice flour, baking powder, and salt in a bowl.

Step 3:

  • In another bowl, mix butter and sugar until fluffy.

Step 4:

  • Add the egg and vanilla. Stir well.

Step 5:

  • Slowly incorporate the dry ingredients into the wet bowl.

Step 6:

  • Pour in the milk and mix until soft dough forms.

Step 7:

  • Roll out the dough to 1/4-inch thickness.

Step 8:

  • Cut out cookie shapes from the dough with a cutter.

Step 9:

  • Place cookies on the baking sheet.

Step 10:

  • Bake for around 12-15 minutes, watching for golden edges.

Step 11:

  • Let cookies cool before eating.

Notes

  • Use fresh rice flour for the best taste.
  • Do not bake too long to keep them soft.
  • Add cinnamon for extra flavor.
  • Store in a container to keep fresh.
  • Enjoy with coffee or hot chocolate.
