Ingredients
  

  • 8 chicken pieces legs, thighs, breasts
  • 2 cups buttermilk
  • 2 cups flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon baking powder
  • 2 eggs
  • 2 cups vegetable oil

Instructions
 

  • Put chicken in a bowl and add buttermilk.
  • Let it sit for 4 hours or overnight.
  • In another bowl, mix flour, salt, and spices.
  • Whisk eggs in a separate bowl.
  • Take chicken from buttermilk and coat with flour.
  • Dip in the egg mix, then coat with flour again.
  • Heat oil to 350°F in a fryer or pot.
  • Fry chicken in batches for 10-12 minutes.
  • Check if the inside is 165°F before taking it out.
  • Put on a wire rack to remove extra oil.

Notes

  • Use a thermometer to check oil temperature.
  • Marinate longer for juicier chicken.
  • Double-coat for a crunchier crust.
  • Let fried chicken rest before eating.
  • Do not put too much chicken in the pot.
