Ingredients
  

  • 2 cups Goya split peas
  • 6 cups water or broth
  • 1 onion chopped
  • 2 carrots diced
  • 2 celery stalks sliced
  • 2 garlic cloves minced
  • 1 bay leaf
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika
  • 1/2 tsp dried thyme
  • 1 cup diced ham optional
  • 1 tbsp olive oil

Instructions
 

  • Rinse the split peas with cold water.
  • Gently heat olive oil in a spacious pot over medium flame.
  • Add onions, carrots, and celery. Cook for five minutes.
  • Add garlic and stir for one minute while cooking.
  • Add split peas, broth, and spices to the pot.
  • Bring to a boil. Lower heat and let it simmer.
  • Cook for 45-50 minutes, stirring sometimes.
  • Add diced ham if using. Stir well.
  • Discard the bay leaf after removing it from the pot.
  • Blend the soup if you want a smooth texture.
  • Serve warm and enjoy.
