- 2 lbs fresh tomatoes
- 1 small onion chopped
- 2 cloves garlic minced
- 2 cups vegetable broth
- 1/2 cup heavy cream
- 1 tbsp olive oil
- 1 tsp sugar
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried basil
- 1/2 tsp oregano
- 1 tbsp tomato paste
- 1/2 cup water
- 1 tbsp butter
Set a pot over medium heat and add olive oil.
Add chopped onions and minced garlic. Cook until soft.
Chop tomatoes and add them to the pot.
Stir in tomato paste, sugar, salt, and black pepper.
Pour in vegetable broth and water. Let it boil.
Turn the stove to low and cook for 20 minutes.
Blend the soup until smooth.
Strain the soup to remove any tomato skins.
Put the soup back in the pot. Stir in butter and cream.
Continue simmering for five minutes, then remove from the stove.
Serve hot with fresh bread or cheese.
