Ingredients
  

  • 4 large potatoes peeled and diced
  • 1 small onion chopped
  • 3 cups chicken broth
  • 2 cups heavy cream
  • 2 tablespoons butter
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • 4 slices bacon cooked and crumbled

Instructions
 

  • In a big pot, melt butter on medium heat.
  • Add onions and cook until soft.
  • Add diced potatoes and broth to the cooking pot.
  • Heat until it boils, then reduce temperature and let it simmer.
  • Boil for 20 minutes or until the potatoes become soft.
  • Blend some soup for a smoother texture (optional).
  • Stir in heavy cream, garlic powder, salt, and pepper.
  • Simmer for 10 more minutes until thick.
  • Add shredded cheddar cheese and stir well.
  • Serve hot with bacon and green onions on top.

Notes

  • Use Yukon Gold potatoes for a smooth soup.
  • Blend half the soup for a creamier taste.
