Ingredients
  

For Chicken Marinade:

  • 2 lbs chicken legs and thighs
  • 1 cup buttermilk
  • 1 tsp hot sauce
  • 1 tsp salt
  • ½ tsp black pepper

For Seasoned Flour:

  • 2 cups all-purpose flour
  • 1 tbsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp cayenne pepper

For Frying:

  • Vegetable oil enough for deep frying

Instructions
 

Step 1:

  • Wash the chicken and dry it with paper towels.

Step 2:

  • In a bowl, mix buttermilk, hot sauce, salt, and pepper.

Step 3:

  • Put chicken in the bowl and mix it well.

Step 4:

  • Cover and put in fridge for 4 hours or overnight.

Step 5:

  • In another bowl, mix all dry flour spices.

Step 6:

  • Take chicken out of the marinade and shake off the liquid.

Step 7:

  • Roll chicken in the flour mix until fully covered.

Step 8:

  • Place on a wire rack and let it rest 15 minutes.

Step 9:

  • Heat oil in a deep pot to 350°F (175°C).

Step 10:

  • Fry a few pieces at a time until they are crispy brown.

Step 11:

  • Take it out with tongs and place on paper towels.

Step 12:

  • Let the chicken rest for 5 minutes before eating.

Notes

  • Always marinate chicken for more flavor.
  • Let the coating rest before frying.
  • Keep oil hot and steady while frying.
  • Don’t put too much chicken in the pot.
  • Use a thermometer to make sure chicken is cooked.
