Wash the red beans under cold water.
Soak beans overnight or boil them for quick soaking.
Heat oil in a pot, add sausage, and cook until golden brown.
Take sausage out and set aside.
Toss onion, bell pepper, and celery into the pot.
Cook until soft.
Add garlic and stir for one minute.
Put in beans, water, salt, and spices.
Once boiling, decrease the heat and let it cook for two hours, stirring at times.
Add sausage back to the pot.
Cook for another hour until the beans are soft and creamy.
Take out the bay leaf and mash some beans.
Serve over rice and add green onions on top.
