Ingredients
  

  • 1 pound red beans
  • 1 pound smoked sausage sliced
  • 1 onion chopped
  • 1 bell pepper chopped
  • 2 celery stalks chopped
  • 3 garlic cloves minced
  • 6 cups water or broth
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon thyme
  • 1 bay leaf
  • 2 green onions chopped
  • 1 tablespoon vegetable oil
  • 3 cups cooked rice

Instructions
 

  • Wash the red beans under cold water.
  • Soak beans overnight or boil them for quick soaking.
  • Heat oil in a pot, add sausage, and cook until golden brown.
  • Take sausage out and set aside.
  • Toss onion, bell pepper, and celery into the pot.
  • Cook until soft.
  • Add garlic and stir for one minute.
  • Put in beans, water, salt, and spices.
  • Once boiling, decrease the heat and let it cook for two hours, stirring at times.
  • Add sausage back to the pot.
  • Cook for another hour until the beans are soft and creamy.
  • Take out the bay leaf and mash some beans.
  • Serve over rice and add green onions on top.

  • Soak beans overnight to cook them faster.
  • Use smoked sausage for more flavor.
  • Stir often so beans don’t stick.
  • Mash some beans to make the dish creamy.
