For the dough:
- 2 cups all-purpose flour
- 1/2 tsp salt
- 1/2 cup unsalted butter cold
- 1/3 cup cold water
- 1 egg yolk
For the filling:
- 1/2 lb ground beef
- 1/2 cup onion chopped
- 1/4 cup bell pepper chopped
- 1 clove garlic minced
- 1 tsp paprika
- 1/2 tsp cumin
- 1/4 tsp black pepper
- 1/2 tsp salt
- 1/4 cup shredded cheese
- 1 tbsp tomato paste
- 1/4 cup water
- 1 tbsp oil
Make the dough:
Mix flour and salt in a bowl.
Add cold butter and mix until crumbly.
Add water and egg yolk. Knead until smooth.
Wrap dough in plastic. Chill for 30 minutes.
Make the filling:
Heat oil in a skillet.
Add onions, garlic, and peppers. Cook until soft.
Add ground beef and cook until brown.
Stir in tomato paste, water, and spices.
Cook for 5 minutes. Remove from heat.
Let the filling cool. Add shredded cheese.
Make the empanadas:
Roll out the dough.
Cut circles using a cutter.
Place filling in the center of each.
Fold over and press edges to seal.
Use a fork to press edges.
Fry the empanadas:
Heat oil in a deep fryer.
Fry empanadas until golden brown.
Drain on paper towels. Serve hot.
- Chill the dough so it rolls better.
- Do not put too much filling inside.
- Seal edges well so nothing leaks.
- Use a thermometer for best frying.
