Ingredients
  

For the dough:

  • 2 cups all-purpose flour
  • 1/2 tsp salt
  • 1/2 cup unsalted butter cold
  • 1/3 cup cold water
  • 1 egg yolk

For the filling:

  • 1/2 lb ground beef
  • 1/2 cup onion chopped
  • 1/4 cup bell pepper chopped
  • 1 clove garlic minced
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 1/4 tsp black pepper
  • 1/2 tsp salt
  • 1/4 cup shredded cheese
  • 1 tbsp tomato paste
  • 1/4 cup water
  • 1 tbsp oil

For frying:

  • 2 cups vegetable oil

Instructions
 

Make the dough:

  • Mix flour and salt in a bowl.
  • Add cold butter and mix until crumbly.
  • Add water and egg yolk. Knead until smooth.
  • Wrap dough in plastic. Chill for 30 minutes.

Make the filling:

  • Heat oil in a skillet.
  • Add onions, garlic, and peppers. Cook until soft.
  • Add ground beef and cook until brown.
  • Stir in tomato paste, water, and spices.
  • Cook for 5 minutes. Remove from heat.
  • Let the filling cool. Add shredded cheese.

Make the empanadas:

  • Roll out the dough.
  • Cut circles using a cutter.
  • Place filling in the center of each.
  • Fold over and press edges to seal.
  • Use a fork to press edges.

Fry the empanadas:

  • Heat oil in a deep fryer.
  • Fry empanadas until golden brown.
  • Drain on paper towels. Serve hot.

Notes

  • Chill the dough so it rolls better.
  • Do not put too much filling inside.
  • Seal edges well so nothing leaks.
  • Use a thermometer for best frying.
  • Let the filling cool before using.
