Ingredients
  

  • 1 package lemon gelatin
  • 1 cup boiling water
  • 1/2 cup cold water
  • 1/2 cup mayonnaise
  • 1/2 cup cottage cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped celery
  • 1/2 cup chopped bell peppers
  • 1/2 cup crushed pineapple drained
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika

Instructions
 

  • Mix lemon gelatin with boiling water.
  • Add cold water and stir well.
  • Let it cool until slightly thick.
  • In another bowl, mix mayonnaise and cottage cheese.
  • Add shredded cheddar cheese.
  • Stir in chopped celery and bell peppers.
  • Fold in crushed pineapple and seasonings.
  • Pour the mix into the gelatin.
  • Stir well until combined.
  • Pour into a mold or baking dish.
  • Refrigerate for at least four hours.
  • Serve cold and enjoy.
